Filip Koletnik makes his ATIMO and only ATIMO blend in naturalistic manner out of grapes sourced from the Goriška Brda region in Slovenia. Only organically grown grapes are purchased in order to achieve a natural balance in bottle. And only magnum sized bottles are used to preserve Atimo. As the wine is deliberately non-filtered, it is recommended to stir up the sediment before drinking wine. Filip Koletnik`s approach is without compromise.

Maceration and fermentation, then nine months on lees in 500L barrels. Afterwards, the wine is racked and put into another barrel for year and a half. Cloudy and not as tannic as expected. Great acids goes well with many dishes. Lively acidity carries this orange fiesta in a succulent finish full of ripe fruits.
